The most common reason for new and strange noises coming from your hot water heater is sediment buildup in the bottom of the heater.  When enough sediment collects, the hot water bubbles up through the sediment and makes popping sounds.  This annoying problem can be avoided by regular flushing of the hot water tank.  You can also install a water softener which will prevent sediment buildup.  If the sediment is allowed to build up, it may cause the bottom of the tank to become corrosive and begin to leak.  (In that case, you may hear a rumbling noise.)  Once the tank becomes leaky, the only remedy is to replace it.
